I use a Garmin Dashcam 20. Use it in my truck for everyday use and bring it in the mh on trips. They dont make this model anymore. It works great and easy to use and set up.

I used to keep a Go-Pro hooked to the dash of my Spyder...
It took some pretty nice videos!

Note that something like a GoPro will take a standard video with a narrow field of view. A camera designed as a dashcam will take a much wider field of view (that Yi one has a 140 degree field of view).

Now which field of view you would want does depend on your intended application: If you're just taking video to watch later (e.g. this is where we went kind of thing) then a normal GoPro like camera may be sufficient. If you are using it for safety sake to capture any events (such as an accident) then you'll want the widest field of view to capture everything.
