Could the condensation be caused by the bread bag being a bit warmer than the air-conditioned motorhome?
Try letting the rig run a little bit warmer on the inside...

Put the bread inside your oven and close the door
We do this after being told about it and it seams to work well
How may people use the oven as an oven inside your rig anyway so it's using space you don't normally use for storage

Or the microwave: We use the microwave as our coach doesn't have an oven.
