We have not incurred the problem of opening doors and falling objects while traveling in our 2013 Challenger. In fact we have renovated by removing the cupboards in favor of open shelving (even in the kitchen). By using Foam shelf liner (the kind that prevents objects from sliding around) we have not had an issue of things falling while traveling. Maybe I drive more gently then some. In a major crash, well, we're pretty much toast anyway.

Doors opening

We used the pressure bars on cabinets and in the refrigerator. On doors that the handles are aligned we used the bungee balls wrapped around both handles and then twisted to lock. Prevented lots of dishes from hitting the floor. Made the mistake of not doing it once and lost 2 bowels and a plate,,with a big mess to clean up. Never made the mistake again. With the bungee balls there is nothing on the cabinets or door frames left behind.

For the large items how about a pressure shower curtain rod, and for the smaller ones, look at a pressure curtain rod, or think about screw eyes in the wood and use elastic cord with hook eyes on the ends to hold things in place.

Go to a store which may carry hardware that is used for preventing young children from opening cabinet Doors. You should be able to find a solution.
I purchased mine at Menards and I have found what I needed at Lowes.
