Shore power, battery charge

If I’m connected to a 15 amp supply will my coach batteries stay charged? Can I switch the coach off so the co detector and other drains won’t be draining?

I'm not sure why you would "switch the coach off" if you are plugged in but I don't think the coach batteries will charge when the the coach is switched off (AKA in STORE MODE). You could verify this with a voltmeter on the coach batteries with the coach plugged in and try different Store/Use positions.
Now, if the coach is plugged in and in USE MODE, the the Coach/House batteries will be charged, but the Chassis/Starting batteries will not (they're only charged by the engine alternator).

If you set the switch to store, the coach batteries will not charge.
The drain isn’t an issue when plugged in - the converter will support the 12v load and charge/maintain the batteries.

As HaRVey stated, and specific to the Mercedes chassis listed in your profile, nothing but the alternator will charge the chassis battery. That is a Mercedes restriction.

The house batteries must be connected to the coach's power center (with charger) to charge the house batteries (master power on or use/store switch in use). The converter will also charge the chassis batteries if the bi-directional relay delay (BIRD) or automatic charging relay (ACR) is working properly.

Not on Mercedes chassis the OP has...
Mercedes does not allow anything but alternator to charge chassis.
The alternator does charge the coach batteries.
