Cleaning drinking water tank

We have s Damon Intruder 349 from 2001, and “0” knowledge of it ( at this point),

I am going to run a bleach solution thru the drinking water system of the Damon to make sure it is “clean”.

I found the low point drain, but is there any other valve I need to turn on (except the interior sink etc. valves to allow the pipe to drain ) as well?

Also, right above the low point drains, there is what looks like to be a standard sink style hot cold water faucet, but it is installed sort of oddly. How was that used? Is it used along with the valves marked low point? I have added a pic.
