Don't know about the laws--so far haven't been stopped, but haven't really pulled the cars much (I think 3 or 4 trips total).

Looks like the majority of the laws say something like "Plainly visible from X feet to the rear" (X = 500, 1000, 5000, etc.):

A lot of them also call for reflectors but most cars have red reflecting lights in the rear and yellow ones in the front.

Yes most of the car is hanging off the back. In a turn the car could block the lights on one side but many of the laws above state "at least one light".
