In my 2014 Hurricane - a booster side belted into the forward facing dinette seat with the table in 'bed' position seemed to me to be the safest..
Would prefer a shoulder strap there too - may look to add something... That would allow leaving the table up safely so others could sit around it as well...

In our 2000 - and when grandkid was younger in full car seat - I used the side facing permanent seat behind the passenger (the seat rotated to lock/face forward as well, but wouldn't with car seat in it.) Car seats state not intended for side facing, but was the best/safest solution I had in that rig.
