Interesting. Normally condensation is the result of differing temps. Is the bread warmer or cooler than the inside temp of the coach? We generally keep bread products in the microwave unless it is being used. Another option is to try storing it in an insulated grocery/freezer bag to keep the bread's temperature relatively constant.
