What does 60 amp mean?
Can we use 50 to 30 conversion plug?

My shop receptacles are all on 60-amp breakers as is my EV car charger
Same plug the Tuscany gets power from
I don't have labels on any of them however
Wired them that way for several reasons including the welders and if you use a dog leg then you get 30 amps instead of 25 like you would on a 50 amp breaker

Look at the breakers and outlets, let us know what they are.
Many possibilities

Think of it this way... the pedestal has the capability of handling a 60amp draw (provided the wiring is substantial enough). But the plugs have 30amp and 50amp respective "fuses" (breakers). So if you plug in something that draws more than the breaker's rating, the breaker will trip... EVEN THOUGH the entire circuit would handle more current (60amps).
Your house likely has at least a 200amp service entrance. But in your electric breaker box you have individual circuits protected by typically 15amp or 20amp breakers. Although you have the POTENTIAL of 200amps available, your individual circuit wiring would melt trying to carry that much current.
So... no worries. Plug in whatever... the breaker will likely trip if you try to draw more current than the breaker is rated for.

Per my reply earlier you will have the ability to use 30 amps instead of 25, could help if your running a space heater and other items at the same time

Why would he have 25? A standard 50 amp RV receptacle uses two 50 amp ganged breakers to supply 240 VAC at 50 amps; so a 30 amp RV using a dogbone has 50 amps at 120 VAC available (one leg).
His "60 amp" service there is using 30 amp breakers to a 50 amp 240 VAC receptacle; so using the standard dogbone he has the full 30 amps at 120 VAC.

exactly, when I wired my pedestal, it came withy 50, 30 and 20 amp breakers in the subpanel. So we always think in terms of 50 amps, 30 amps or 20 amps for a total possible of 100 amps. But I can run 100 amps in total on that box because I have a 60 amp double pole breaker https://www.homedepot.com/p/GE-Q-Lin...2160/100676698 back in the house in the main Electrical Panel.
So individually, I am always good with 50 amps, or 30 amps or 20 amps. However, if I use 50 amps and another that causes be to initial go over 60 amps, the breaker n main main panel will trip while the two outside are just fine. FWIW, I have never tripped any of those breakers.
To the OP?
What the heck you need shore power for with them new batteries, genny, and solar, I was thinking you were looking to sell your shore power cord
