My overhead bedding consists of a inflatible mattress, a fitted sheet and flat sheet. In the winter I have a sleeping bag for those who dare to camp with us in the "cold months". Mattress is inflated with my small vacuum cleaner which stows easily behind the sofa bed. When not in use the mattress is deflated and stays in the overhead bed along with the bedding.
Don't know about other RVers but I am down to the very basics when it comes to cooking on the road since most cooking is done outside using a griddle, one burner propane element, one fry pan, one wok pan, one 2-quart sauce pan, my Can Cooker. They (except for griddle and element), and my kitchen towels, etc., easily fit in the bottom deep drawer under my stove top.
My Vegas bedroom has overhead stowage that meets in the back two corners. Since it is a PIA to get to anything stowed there, I put things I rarely use (such as extra bedding/electric blanket/throws)) in those corners.
