The 2016 Vegas 24.1 came with a low end Axxera. Just was not a quality unit. I replaced it with a Kenwood DMX7706S. Really happy with it. Sound quality is far superior and radio reception far better. Touch screen and all around easier to use. I had never replaced one myself and it was easy to do. I had to buy a separate after market connector which prevented me from having to splice and solder wires. All good. Good luck.

Not sure what head unit you have in there now, but my Thor Class C (Ford E350 cutaway) came with an Axerra POS and I replaced it with a Jensen CAR1000. Retails $349, but found on eBay for only $249, yes new. As far as wiring, it was a very easy install - plug and play with and rear camera also. Does Spotify and Apple CarPlay/Android Auto, Google Asst and Siri. 10" touchscreen and it has a manual volume knob below which is more intuitive (for me) to adjusting the volume. I love it.

However, getting to the head unit was a little more difficult because I had to displace the entire dash which took longer than the install itself.

Yes just did my Thor 2018 WS31 with Sony product. All cameras work just fine.

3 different stereo shops told me my cameras will not plugin to any head unit except for the fusion 801

The fusion specs say cameras plug in through a secondary harness. What type of connections do the cameras have plugging into the secondary harness? Can the cameras unplug from the secondary harness and plug into another head unit or a camera switch?

Afterthought steering wheel radio controls are about $40 on Amazon.
Easy wireless hookup.
The buttons will control devices other than the radio with easy programming.
Maybe work with the factory thor firefly(?) controls?...

From the OP's post #9 I suspect the Thor installers cut the RCA end off the secondary harness and wired the pigtail directly into the camera switchbox (what the OP calls a multiplexor). Probably didn't have an RCA to RCA patch cable available. The stereo shops probably have no experience with this camera switchbox and don't want to learn on the OP's coach.

Dude! Find a audio shop that has techs that know what they're doing! There are lots of double din units that have camera and other inputs. It can be wired by a tech by direct harness or cut and splice the correct connector.

Replace it with the exact same unit.
You have a problem no one else has ever had.
Have you been to the shops or is your information conveyed by phone?
At worst you're a $45 camera control box away from everything NOT going through the head unit.
