Replace Holding Tanks

Has anyone replaced their holding tanks with larger ones? We're new to the game and wondering if 25 grey and 22 black is going to be enough storage for weeks on the road. Also looking at a larger Fresh tank as well.

That's not big enough for three consecutive days.
Yes, I've done it.
Easy. Buy what fits.

Two Travel Trailers ago I added a second gray tank in parallel with the OEM 30 gallon gray tank. The floor supports run side to side on a TT between the outside frame supports so there were "bays" between the supports where the OEM black and gray tanks lived. It was easy enough to buy a standard tank that fit in the bay next to the OEM gray tank and support it with straps just like the OEM tanks and plumb the drain and vent it parallel with the OEM gray tank.

In a MH your main frame supports run fore and aft and more centerline so the side-to-side supports are broken up into 3 "bays". Your OEM tanks may be as big as they can fit into one of those bays, or they may be above the floor and sandwiched in between other structure.

Or......
You can get creative, and find fresh places to dump the tanks!

Do your neighbor's roses look as I'd they could use, some fertilizing?
