Food Prep for our 76 day trip

Disclaimer: we have a Whirlpool residential fridge in our coach.

In preparation for our upcoming 76 day trip we went to Sams Club and bought a 12 pound brisket a 10 pound pork butt and 4 12 ounce ribeye steaks.

Yesterday I spent approx 12 hours smoking the meats on my Traeger Ironwood pellet smoker.

Today we sliced the brisket and pulled and chopped the pork and packaged them in 12 ounce servings using food saver bags. After a partial freeze we sucked the air out of the bags using the food saver and returned them to the freezer.

After the DW's give away program to neighbors we have enough brisket, steak and pork to last the trip.

The purpose behind this effort is to have a meal ready to re-heat for those travel days after we pull into a campground and set up for the night and don't have the time or desire to go looking for a local restaurant. About noon on travel day we'll remove a pack of brisket or pork from the freezer and let it thaw during the remainder of the day's travel so it is ready for warming when we get to our location.

We're big time foodies.
Five types of salt on the table, two types of capers...yadda yadda.
But
We live on frozen dinners when on the road.
Stoufers, Boston market, marie calendars, even banquet.
It makes life easy, it gives us almost endless variety, I needn't eat what she wants to eat and vice versa. We often do this at home for weeks without cooking. Honestly our a five hour to make stroganoff isn't that much better than a doctored up stoufers.
I've never even lit the stove in the 24.1 to see if it works.

Store had pork slab ribs at 1.98 a pound today. Four of those monsters are headed to our smoker tonight along with a shoulder.
Dry rub, no sauce. Various sauces on the table,
Freeze until our big party in July.
I'll throw a bare naked ribeye in with them.

Oh! We go quick & easy... pre-made burgers, brats, eggs, bacon sandwiches.

Dave you must get a set of these. Comes in many sizes you pop out what is needed and refreeze wife and I use all the time .see the amazing reviews

We are going to be in Kentucky June 19 - 30. We are staying in Walton, but using the car to get around everyday. We are going to Louisville to the Louisville Slugger baseball bat factory. We have a riverboat lunch trip and a trip to Rabbit Hatch. We will also be in Branson July 02-04. Maybe we will see you along the way.

Paul,

Louisville for us is June 20 and we are staying in Shepherdsville for one night on our way out and then again on August 8 for three nights for some sightseeing.

We will be in Branson Beginning August 4 for 5 nights.

I imagine we'll pass on the road somewhere.

I did forget to list a stop in St. Louis between Louisville and the QC area.

We originally planned on starting the trip yesterday with additional stops in Pigeon Forge and Loretta Lynn's Ranch but the sale of the house in Virginia required that we make a few changes in the itinerary. Signing a deed in Virginia still requires hardcopy non-digital notarized signatures so, IMO, trying to get paperwork to catch up to us for the signature was a little too risky. Once we sign the deed anything else can be done electronically and we can hit the road.

We will be in Branson July 02 leaving July 04. We plan on being back home on July 08. We arrive in Kentucky on June 19 and leave on July 01. We stop at Loretta Lynn's Ranch on July 01 and leave on July 02 then off to Branson for the next 2 nights. We stop at El Reno Oklahoma, stop at Las Vegas New Mexico, stop at Holbrook Arizona and our final stop will be at Sam's Town Las Vegas which gets us within 4 hours of home. I am planning that if it is too hot in Las Vegas Nevada at Sam's Town KOA we will get a room at the hotel for the night. We only have one air conditioner plus a couple of fans.

We were married in Vegas. .it is hot..just pre cool motorhome and keep her running..our 18 foot keystone travel trailer AC worked in az and Nevada in 115..you are ok

We did the same thing in 2019 when we left for a 30 day trip from NC to the west coast and back. It's so nice to have some good ole' home cookin' on the road. Cracker Barrel and fast food gets old fast!!!!!!!!!!!!!

I dunno... Waffle House always seems to be pretty good to me.
