Using Convection Oven and Grill

I’m a fairly new owner of a Thor Gemini with a High Pointe microwave, convection, roast, and grill oven. What type of cookware can you use when using the convection oven/ grill features? I’ve read various answers as to whether aluminum cookware can be used (I know it can’t be when using the microwave). I’m wondering what folks who cook and bake use?

The HighPointe manual leaves a lot to be desired. I found this one with a lot of detail on cookware and operation. Hope it helps

Anything you want on convection, it is like a roaster oven

However if using the hybrid features then glass and no rack
