Welcome aboard.
First thing I would do is get the coach's VIN number and go on Thor's website. They have a section for owners. Register your rig with its Vehicle ID Number (VIN) and the owners section will have tons of information regarding your particular model and its systems, including how to videos on the coach's systems work. Many of your questions and concerns can be answered right there.

Welcome to the forum. I'm not familiar with your model, but MCJ62's advice is the best place to start.

Welcome to our little suaree! The above advice is good. You can obtain digital manuals on most all your stuff.

The valve on the blue line is not what they are referring to. Why can't they just use normal words and say make sure your black tank valve is open before using the san-t-flush tank flush connection. Otherwise you may overfill the tank and no one wants that.
Sorry I'm not normal either so I can't help there.

Our rig also has a Kantleak system, but ours includes a second valve for the water heater. Assuming the main valves are similar, “Normal” is for using the pump to draw from the fresh tank to pressurize the plumbing with fresh water. “Tank” is likely to fill the tank - ours says “Tank Fill”.
It looks like the valve on the blue pipe may be used to drain the fresh water tank.
As far as the switch goes, if you turn the switch on, you’ll almost certainly hear the (fresh) water pump running, assuming it’s operating correctly (e.g., pump not seized or fuse blown, usually an in-line one). It’s ok to run it dry for brief periods to check it. It may also be a kill switch to override the inside pump switches.
I think you and the others above are spot-on with everything else.
Our selector valve is pretty difficult to turn. I keep meaning to pull it out, take it apart and lube it with some silicon plumber’s grease to see if it makes it better. It could be that some debris is jammed into yours.

Kantleak system
Thanks for the info.....I did find out the the knob that I said is frozen is called a 4 way rotator vale and its supposed the be easily replace and found how to do it but is frozen so bad I couldn't get it out. Then found out the Kantleak System has been udated to a whole panel and they don't make that rotator any more and I have to purchase a whole new panel.
Again thanks for your reply

Welcome to the forum! This group is full of some great people! I hope the purchase of a new panel won’t be too costly. Good luck and happy travels!

That’s great news! I know it’s frustrating to already be spending money on something you just purchased, but it’s all part of the experience of RV ownership.

I have a 2017 Thor Citation 24ST and have a similar (not exact) set up. I believe others have answered you, but Normal=water pump supplies water, Tank= fill the tank with water, Public (mine says City) is for pressurized water from the rv park etc. My switch was very difficult to turn, but I was able to turn it and with usage has gotten a little easier. Might help to relieve all pressure from the system before turning it. If you are going to replace anyway, might get the vise grips after it. I believe they put the pump switch in there to allow you to use the outdoor shower without going inside to turn on the pump. Good luck!
