I'm new to both RV'ing and Thor. I now have a 2018 Thor 31 s. Had several issues with awning and slide outs not working for the first 6 months of owner ship. Finally Thor stepped up and corrected a wiring issue.

I'm looking for a general check list for both setting up and packing up, Any help is appreciated.

Welcome to the forum! You are smart to get some checklists. Any pilot can confirm that.

I keep a short reminder list under my driver side window and always review it before departure.

I think there are checklists in Ed Felker's excellent crowd-sourced manual for Vegas/Axis. There is good information there that applies to many other models.

You might also find some good ideas with a general web search. Ultimately, you'll need to customize your own checklists.
