Data plans for streaming while on the road

We recently took possession of our new Aria 3601 and one of the features is a Winegard 4gLTE antenna allowing for better WiFi and cellular reception.
The device came with an AT&T SIM card but as we are long time and current Verizon customers we opted to purchase a SIM card from Verizon.
Once I was able to overcome the self induced technical installation and set up issues, it worked as advertised and my wife happily binge watched Netflix via Roku while we are breaking in the new rig, until that is, we reached our data limit of 15gb when the Verizon metering took over and slowed the data rate considerably, to the point that streaming was no longer an option.
Verizon tells us that they do not have any type of “unlimited” data plans for streaming devices, only for phones.
I am not much into TV but as my wife is and she has now had a taste of it while camping, can anyone suggest a data plan that will allow more than 15gb, that is of course affordable?
We utilize AT&T Uverse at home and at this point I do not believe I am prepared to move to a satellite set-up while camping.
Thank you in advance for any guidance or suggestions.

NetBuddy online has an ATT hotspot device( Netgear Unite Explore 815S 4G LTE Mobile Wifi Rugged Hotspot -Refurbished $85)that is 'unlimited' speed, as long as you have a good signal... $65 monthly for the unlimited service, including taxes, fees, etc. You don't have to necessarily switch your phones from Verizon, either, as this device is used on ATT's towers without having to have any phones attached to the same plan.

You can also start and stop the monthly plan anytime you wish.

We have the same problem with our T-Mobile unlimited plan ... unlimited data on the phone (iPhone) itself, but the hot spot is throttled after reaching the monthly limit. A partial work-around is to plug the phone directly into the tv’s hdmi port using an iPhone adapter, with content coming from our iPhone apps. That way, we can avoid using up our hot spot data limit. But, it’s a only a partial work-around, since not all apps allow you to mirror your phone to an external screen. For example, PS Vue will not work like this, but Netflix does.

It’s college football season (Geaux Tigers) and MLB Postseason (Go Stros). So, a lot more to watch than just movies. We got up early a couple of Saturday’s ago and drove the Challenger just under 200 miles so that we could be checked into the next RV Park in time for an 11 am game!!

I have a Sprint $50 unlimited hot spot and FMCA has some kind of deal with them that doesn't require a phone or commitment since you aren't a Sprint customer already.
