If you are at a park and hooked up to sewage should you just keep your black and gray tanks open?

Its always up for debate.
We don't hook to water or sewer until just before we leave .
We're all about quick exit and using the systems we're familiar with.
I know My pump pressure and I know what makes my black tank happy.
I do not know their pressute or what makes their septic burp or flood.
Punchline:
People do both but I'll suggest valves closed.
I don't know a reason to leave the valves open.

We don't - especially the black water tank. It takes a bit of water to flush the solids. If the tank is open, the water will go out - but the solids have a tendency to stay. So we let it build up - maybe half full and then dump. We use the grey water to rinse the stinky slinky after emptying the black tank.
I'm always the one to do the dumping. It is really convenient to do the dumping at the site. I don't feel rushed - holding others up. We have a sani flush system and I can hook that up and let it spray for 10 to 15 minutes and get a really good clean.

Now,
There is a trick to the closed valve decision.
Many, maybe all, modern rv's run their bathroom sink to the black tank.
Chronic handwashing will make you think your black tank is reeeaalllly tiny.
And
Overfilling the black tank can lead to a poop ball in your vent.
It's a small skill to learn, but its a skill nonetheless.
Pay attention. The wifes concern of overfill is a real one.

I would leave them closed. You need the black tank to fill up in order to flush out all of the solids otherwise they build up and cause issues. Plus you don't want the sewer smell to enter your coach by leaving the valve open. I hook up my sewer hose but leave the valves closed until ready to dump.

Since we have yet to camp at a site with sewer hook ups, I'm glad I read this thread!
As far as water, I have a regulator, so pressure shouldn't be an issue. We only have a 40 gallon FW tank and 25/22 GW/BW tanks in our FW 28A

Over pressure isn't the issue.
Underpressure keeps tankless water heaters from working correctly.
It's why we use our internal tank and pump...always...never shore water .

Started leaving the gray open till the day before we dump the black. Had to on this class C, the gray would fill every day and a half = 2 or 3 gray dumps per 1 black
The real reason is DW doesn't like to stand in shower water when the gray is full

Along this line, we have learned to always keep some fresh water in the tank. Enough for essential needs for a day. More than once we've had an RV park shut off the water for repairs. When you have water on board, being shut off isn't a crisis.

We keep an eye on the tank monitors, and dump as necessary.
For the record: we have to use the gray water tank for the Missus' dialysis fluids. We dump them in the shower. 12 liters of fluid overnight.

Absolutely positively NO on the black tank!!!
If you've ever made paper mache, imagine that with toilet paper & poop, that's what happens if the black valve is left open.
I had 2 grey tanks, bath & galley, that I left the bath valve open, it included the lavatory, shower & the washing machine, as it would fill in a day or so, but I did close it a day before dumping the black.

Dont open the black tank until you need to do so.
Open the grey tank, and leave it open until a day or so before you need to dump the black tank. Judge this by experience so the grey tank can reach 2/3 full or so you have enough grey water to effectively flush your drain hose after dumping the black tank.

A trick on the grey is to leave it opened and leave a dip in your hose so sewer gases don’t go into the coach.
If you do this, be sure to take the dip out when you dump the black and be cautious about what you put down the sinks. We wipe all food and as much grease or fat off the plate as possible. We also use blue dawn exclusively for the kitchen sink.
