What is the difference in the list below for "waste water" 4.75 gal -- vs gray water? Where is the waste water coming from in contrast to where the gray water is coming from>

It would not be the first time that Thor improperly installed plumbing but........ when I looked at your floor plan, it shows you have toilet / shower combo. I would think there would not be enough room to have the shower and toilet in the same location and have separate drains to different tanks given the size of your rig.
It is very possible your kitchen sink is plumbed to the 20 gallon grey tank but the shower and toilet are plumbed to the ~5 gallon black tank.
You need to go to the Thor Owners site and download the schematics for your rig to see how they actually plumbed everything.
What doesn't make much sense to me after watching the video is that it says your rig has a cassette toilet.... which means no need for a black tank at all. Many cassette toilets have their own 5 gallon removable waste reservoir. So it is possible that Thor has plumbed things so you don't have to remove the reservoir and you just open the valve to drain it as shown in the video. That may in fact mean the shower is draining into the cassette toilet reservoir as well and that is why it backed up into the shower.
That would be a crappy design (no pun intended) but I think that is the way they did it because of space restraints. The 20K and 20L have flush toilets and 13.5 gallon black tanks but the 20A and 20J have the cassette toilets and ~5 gallon waste reservoir.
If that is the case, you are going to be taking showers where you only run the water momentarily so you don't fill up the tank by just taking a shower. One of the reasons it has the Showermiser for getting the hot water hot without filling the tanks too quickly.
