Will the fresh water tank in my 2018 Chateau 26b freeze travelling in winter?

Depends on location of the tank, outside temperature, whether you have heat going on inside, how many days below freezing the weather will be, what is the temps during the daylight hours...etc...etc...etc. where are you traveling?

Assuming the tank is in the same location as my 2021 26b, it's under the front dinette seat. The outside edge of the tank extends down past the frame to the bottom of the wall (vertical L shape) with some of the plumbing down near the bottom of that. Seems unlikely to be an issue, but I suppose if it was REALLY cold the bottom of the tank well where the plumbing comes out could be an issue.

Download your schematics from the Thor Customer area - you’ll need to set up and account. The 2017 26B shows the FW tank is mounted under the front bench of the dinette. The gravity fill on the outside is in the bench area as well. 2018 maybe different. I wouldn’t worry as much about the tank freezing since it is a large mass of water. I would worry about the pex water lines. If you are occupying the coach in the cold weather then you will probably be fine as long as you are heated.

Mine is in the bedroom below the closet, so mine is safe, some of the heat ducts are near by. It would be good to know where yours is. If it's inside you're probably safe, but if it's outside that would be a problem
