Generally speaking none of the C manufacturers do any customization at the factory. In fact unless you go up several notches in the price point, customization in RVs isn't done. What you are faced with is finding one with the desired floor space and remodel yourself. There are some bunkhouse versions with 2 bunks on the curb side which advertise as also wardrobes. Perhaps gutting and building a workspace? I see a lot of comments about needing office space as you do and often they refer to using a toy hauler for that. In that case the garage easily becomes the office and often with a half bath. But of course now you have a towable and required tow vehicle. If you get a C you still really need a towed vehicle, toad.
Also to consider is how much you will be driving. If you anticipate lengthy stays, a towable makes more financial and logistical sense. If frequent moving is in the scheme, then a motorhome of the A or C variety might make sense.
