First: Welcome to the Forum!
That loose cable looks like a ground. Shouldn't it be attached to your battery?
I think that we need a picture that shows a bit more of what you've got in front of you.

The loose black cable on the left goes to the negative terminal on the battery, the loose red is connected to the positive battery terminal, my question is what is the red connected to on the chassis (in the background) along with 3 other red wires.

I might have understood it if that was grounding to the chassis but the loose red for sure goes to the positive battery terminal. I "tested" this before and blew the reverse polarity fuses at the converter.

Attached another pic. Best guess is that is an insulated junction post.

I would agree with that guess but be careful, Thor has been known to mark ground cables with red paint and/or heatshrink tubing.

Post the year and model of your RV.. May be easier to respond. Wiring varies greatly between models and between years on the same model. I try to label and take a photo before I take disconnect/remove anything..
