Did you try the slide switch on the thermostat?

Two A/C units running all night is not normal. You need to determine if these units are running correctly or of you have other problems. There are several threads on this Forum discussing A/C troubleshooting and cooling efficiency, including one very long and informative thread. Maybe research those threads and come back with some more information. At this point we don't know:
What size the A/Cs are
What the thermostats were set to
The outside overnight temperature
The inside temperature
How many people were in the RV

The KW29 specs say Dual 11,000 BTU Roof Air Conditioners.

First thing I would do is pull the inside covers off and see if the supply and return plenums are properly separated.

Were the air conditioner compressors working or just the fan parts on either high or low? 11.5 units will struggle to to keep it cool. Also check to make sure a bath vent wasn't open and the fan going. If it was even a pair of 15K would have a hard time keeping up.

Fess up time, on a recent trip we just couldn't get it cool. The bath vent is very quiet and we couldn't hear it being on. Walked in the bath, looked up, saw it ON. Turned off and coach cooled. Note to self " after business done and not needed, turn off fan".

Also what Ted said. Those baffles are frequently not secure. Several videos available to explain what needs to be taped.
