4 winds 31Y. Convert bed to twins

I have a 2020 4 winds 31Y. The bedroom has a short queen. The bed is difficult to make and my wife's mobility makes the room difficult.

I would like to convert the area to twin beds of about 35” wide each.

Has anyone done this? The task it made more difficult with the water tank crosswise under the bed. I thought maybe relocating the water tank all the way to the rear.

I would appreciate any comments, suggestions, or ideas.
