Here's my solution:
Buy an Aeropress: www.aeropress.com
Just boil water on the stove and no need to worry about
batteries, etc.
I have used mine for many years and it makes a great cup of coffee.
James
PS: Invented by the same guy that invented the Aerobie flying disc.

I'll bet the Aeropress just flies off the store shelves.

With one of those items being a compressor refrigerator, that doesn't quite work. It's label might say it pulls something like 500W (or whatever), but it'll need better than 1000W to start the compressor. They never put that on the labels, but it matters when running off an inverter.
For coffee, I use a pour over filter. Mine is a Swiss Gold:

But I think they're not around anymore.
There are others, like this one, though:

We keep one in storage for outdoor use on the fire or grill
Most of the larger class A coaches are all electric now so more interest in inverter and battery issues

The "Perk" Pot doesn't care if the heat comes from a gas or electric stove..

Exactly , and why the interest in having the battery/inverter power to be able to perk, drip, or boil without shore power i the morning

We also love our coffee, but have different tastes, so we enjoy Keurig K-Cups. To save on both space and peak electricity, I purchased a compact coffee maker that takes up much less space and uses about half the peak power as our previous Keurig-brand coffee maker. It does take longer to make each cup, but the point is that if a coffee maker uses too much power for a given inverter, there may be other models that use much less peak power. Just something to consider if present inverter isn’t large enough to power multiple items simultaneously.

Can you tell me which small K cup coffee maker you came up with. I have the same considerations. Love my AM coffee, but the wife needs Tea.

Interesting idea of checking on the watts per the coffee maker. We travel with a Cuisinart which is the old one from the house. Never checked the watts but will next trip just to see. It has the adjustable warmer so you can reduce that or turn it off after brewing.
Typically we overnight in areas where generator time in the morning is typically 7 am but I like my Bob sized cup early in the AM so it is nice to have battery left

I'm new to RV'ing and we did our first overnight winter dry camping trip this last weekend and stayed at a Harvest Hosts winery that's quite close to us...we were testing our 'boondocking' skills...it was cold but we still enjoyed it...we're in Oregon...
...our Thor Citation 24SJ had zero tolerance for powering anything that had A/C needs including the coffee maker or the Induction Plate...the generator appeared to want to run at all times...in the Thor specs it say that 'Converter Amps' are 45...so x 12V is that only 540 watt capability?...shouldn't it be more than that?...or am I reading the specs wrong and there's just some kind of fault with the installed inverter?...is there a mod to get more watts available that even a dufus can install?...
Had lots of other concerns but this is the most critical...other 'debilitations' of note were the tankless hot water suddenly going off, water flow pulsing, dinette footrest collapsing,...
(...we used all of the 40 gallons of water but only 3 gallons of propane in the one night...:-)...cheers Harmsy, (Ian)

The CONVERTER is rated at the DC current it can provide at 12 VDC when plugged into SP or running the generator to charge the battery and/or supply DC loads.
An INVERTER will supply select (residential fridge and TVs) 120 VAC loads using the stored energy in the 12 VDC house batteries.
If you don't have an INVERTER then the only way to get 120 VAC when not plugged into SP is to run the generator.
Boondocking requires judicious use of fresh water: look up "Navy shower".
