Replacing couch in a Axis 25.2

Has any one replaced the jack knife sofa in this RV? Not sure it can be done with the fresh water tank "in" the couch. Any ideas?

A friend that had a 25.2 replaced the jacknife sofa with a vinyl covered platform, then mounted a pair of van seats on the platform. He was happy, but then soon switched it back and traded for a newer, bigger Axis.
You surely know that the water tank is under that sofa. That limits your options.
