We grew up in the Texas panhandle & the Big Texan is advertised all across the country, it's definitely worth a stop whether you eat or not.
There are 2 nice rv parks on the west side of Amarillo, one is the Oasis very nice with lots of concrete/asphalt mostly pull thrus, very few small shade trees so could be very hot in mid summer. The other is Ft Amarillo that's much smaller with some pull thrus for short term guest with mature shade trees & a very nice gift shop.

A follow up on Danny's comment above. If you do take I-70, keep in mind that there is something like 110 miles between Green River, Utah and Salina, Utah. They even have signs at some of the on-ramps stating that there are no services for that distance.

It's a dang beautiful drive, but make sure you have plenty of fuel.

If you are coming up through Bryce and Zion there are plenty of gas stations there around the parks. The trip up Hwy 15 and across Hwy 70 that runs north up and and around the national parks does have a 115 mile stretch with no fuel stops but you bypass all that going through the parks. Years ago it used to be 126 miles No Services. We laughed the first time we saw it and took a picture. That is a beautiful route but pales in comparison to coming through Bryce and Zion.

As far as fuel and getting to Denver, we fill up in Grand Junction and have no issue making it to the Love's Truck Stop north of Denver so you should be good getting to a fuel stop over the mountains.

We've run Hwy 36 from the Mississippi in Missouri to almost Denver. Not a lot of camping but we stayed in a nice little city campground in Kansas.
