I think it would be hard to beat I 75 for a direct route.

Your other option takes you east from Knoxville on I 40 then south on I-26, about the same distance, but that route take you over the Great Smokies. Atlanta traffic is legendary (bad). There is an east bypass and a west bypass. Check the Waze app before you choose. We have had pretty good luck going right through the middle, but we carefully avoid morning and evening rush times.

Do you have reservations at Ft Wilderness?

I-75 is the most direct route but is hardly mountain free. There is an especially tall grade just south of Cincinnati in KY. Of course this isn't nearly as bad as the mountains out west.

I've recently went that way in our 24.1 and it had no issues with that even pulling a toad.

I75, we travel it a lot from Sandusky. Watch crossing the Ohio river, there is usually a ton of traffic there. Don't stress the mountains, instead enjoy the views!
