I ran into the same problem, actually every time I use the slide out. First of all it’s not recommended to move the rv while the slide out is extended.
If you have levelled your rv and you extend your slide out and now you find that you are out of level, try to estimate by how much, retract the slide and add the estimated “shim” to your existing levelling material(pieces of wood etc.”)

Manual Level

I level using the automatic mode. Then after the slide out is extended, I put it on manual mode and add a bit until it is level.

The OP does not have levelers. He has to drive the rig onto leveling blocks.

I put a 1 1/2 X 12 under the slide side ,drive up and then put the slide out ...Perfect every time
