I did try that originally, but it did not help. The best access came from removing the padded panel underneath.
It seems the cabinets were assembled and then mounted leaving the screws inaccessible from the back due to the bunk frame. Ultimately, I decided to drill large holes at each screw and angle the screws out so they could be unscrewed. It destroyed the panel, but I think that was inevitable.
I swear they do not factor in repairability when building these things

Failing all else a fine hacksaw blade mounted in a hand fixture might be able to carefully follow the panel edges and cut the necessary pocket hole fasteners along the way. Unfortunately that would likely cause panel damage or at minimum a gap along the board frame edges.
