I thought about buying the hood. I like tge idea of it but worry about the extra weight in the cargo bay

Yeah, the weight is what I'm concerned with, too. A couple years ago, I got an aluminum 4 ft table that actually collapses like a baby stroller. The top is made up of aluminum slats that roll up for storage. This would work -- but not nearly as stable as the stand it came with. That sucker must weigh as much as the cooktop with the griddle on!
As far as the hood, I'd almost rather work with a separate cover for steaming veggies or whatever. While that's going on, you still have open space to grill and work with other foods. There's a youtube video of a guy who took rectangular baking pans and attached cabinet handles to them for this very reason. The shape made better use of the space than round domes. Ingenious!
I guess I'm saying I agree with you about the hood. Not really necessary, but it does keep the dust off...and it doesn't really weigh that much. Certainly not as much as the stand!
