You can put a home t-stat in but you'll lose the 2-speed selection on the A/C Fan (not that it matters much: loud and extra loud). Have to make sure you use one that is self-powered (usually you can get ones that take AA batteries).
The original digital swap out (I did one on my 5th wheel about 15 years ago) used a home t-stat because there wasn't any specialized ones for RV's. Back then if you wanted to control the 2-speed A/C fan you mounted in an extra switch.
