Welcome! We got into RV'ing for similar reasons (needing to take my wife's health comforts with us) and are now spoiled with always being home, no matter where we go.
I would recommend trying all of your systems at a place with full hook ups as if you didn't have them just to make sure they work or what their limitations are (i.e. how fast you go through your water, how fast the holding tanks fill, how long batteries last without generator, etc.) so you know how everything works before you need it when you didn't plan on it.
Learning the process of when to switch the fridge or water heater from gas to electric etc. in order to manage all of your resources so you can enjoy your trips for as long as possible is part of the learning curve.
Never be afraid to chat up your RV'n neighbors if you have questions as most are happy to help and proud to share their knowledge, experience and opinions.
