I'd leave the vents cracked just a tiny bit... Less chance of rain finding it's way inside.
But if you have MaxxAir Vent covers: you can certainly leave them open a whole lot wider.
We always strip our rig right down to the way we got it from the Dealership. Nothing goes into storage with it. (Nothing left behind to be stolen)
Dryer sheets to deter the mice is a good option; but we always use cotton balls soaked in peppermint oil.

EDT: I almost forgot... It's not a bad idea to shut off your propane right at the tank!
