If my inverter's fan continues to run for what I believe is too long, or for little reason, I simply touch the sensor with a piece of ice, which almost immediately turns it off, never to come back on.

I'm not sure, but it feels as though these sensors don't always kick OFF as they should, for whatever reason. The fan is basically the factory's way to help rid the inverter bay of extra heat that could effect the Inverter's operation. But, when the fan continues to run for seemingly no reason, hours later, it makes me think that the sensor is not operating correctly, but I guess better to run the fan, than not.

Some rigs are experiencing the opposite problem - their factory did not install any type of cooling fan, and they have issues with overheating in the inverter's bay.
