Not sure of your setup but my fridge has a drawer underneath. Pull the drawer out and you can access the waterline there. Turn the valve off or disconnect and plug the line. The ice maker is one of our favorite features so I let the "Pink Panther Pee" cycle through the ice maker when winterizing...reverse process when de-winterizing.
