I used to have one of those on my strong want list when I was shopping to upgrade from our pop-up.
I eventually came to realize that I wouldn't like it, and I'm glad I figured that out before buying.
My point is that I can understand why you would want to do it....

My only other comment is more general in nature. I personally would be very reluctant to do a major and perhaps irreversible modification to an otherwise like new RV.....unless I had zero plans to get rid of it until it turns into dust. It just generally seems to me that almost anything a person might do is going to make it look like a homemade modification, even if it's very nicely done and even if it is a mod for the better and very functional.... I would just think it would potentially destroy resale value. There's probably always gonna be someone out there that wants the kitchen and wants the rv more or less as-built.
