So with a 50 amp rig you essentially use two 120 VAC hot lines (just like your house). Although the microwave works, it appears you have no power to the other hot leg for the fridge and A/C. This can be caused by a faulty 50 to 30 amp adapter, a bad Automatic Transfer Switch (ATS), a bad Energy Management System (if installed) or just bad/loose connections. To determine your real issue you will need to be able to use a multimeter on live circuits. If this is not a skill you already have, troubleshooting this issue is not the place to gain that skill.
EDIT: I see I had you backwards - you have a 30 amp rig plugged into a 50 amp receptacle using a dogbone adapter.
So now I think you're down to bad connections as ALL 120 VAC loads in your MH run off the same hot leg. It won't be the ATS if your microwave is working.
