Done lots of residential flooring, but I'm not sure I'd want to tackle an RV... my gusto ran out for that about 15 years ago.
If it's a "must do", small 1/4 round would work along edges. I would staple flooring along edge, run a bead of sealant along the edge then shoot small quarter round in place while sealant was still tacky. Pre-paint the molding close to tje color of the flooring and it would help hide it a bit.
