If you feel you are still going too fast just tap the brake again and it will downshift again. Once on level ground pressing the gas pedal will return the transmission to normal operation (but still in tow-haul--tap the button again to turn it off). If the hill is still too steep for that then you'll have to occasionally use the brakes.
