Bachelor Beef Stew.
1lb or more stew meat (nothing fancy)
1 packet of Knorr ,McCormick or Schilling beef stew mix (or veg/beef)
1 smallish Walla Walla sweet onion chopped..or if you are on the wrong side of the country...Vidalia sweet onion
2 or 3 smallish spuds whacked up a bit
1 or 2 cups water
1 cup (or 2) frozen mixed veggies ( diced) I like a mix of green beans, carrots ,sweet peas & corn.
( just keep it simple, I don't do spicy, no salts or peppers)
throw it all together in crock, set on lowest heat.
Hit the road
When it starts to smelling really good,(4 or 5 hrs more or less) Park, & give it another hour or so ,
While you are waiting grab that cast iron Husband whacking skillit and whip up some honey sweet corn bread in the gas oven .. & some 3-2-1 cake for desert!
Put a baking mat or similar under the crock to keep it from sliding around in the sink while you are going down the road
