This is NOT normal - though unfortunately more common than it should be... The disconnect SHOULD disconnect everything - and coach should be able to be stored for a month or more with no issues of dead battery.
You can either chase where the draw is coming from - or add additional disconnects that really do the job.
These batteries don't tolerate being drawn to 'dead' and after doing so multiple times I wouldn't be surprised they need to be replaced.

Definitely want to check out the converter... With batteries DISCONNECTED (so you aren't reading battery voltage) you should read well over 12V from the outputs of the converter (12-14). If not - it won't be properly charging and your batteries will only be charged from the alternator when the engine is running.
Also verify the connect/disconnect switch (not the switch you press - but the actual switch/relay it is attached to..) You should hear a solid click when flipping the switch - and should be able to verify operation with a voltmeter. (Want to be disconnected from shore power/genny for this one - as you want to read battery voltage and not converter...)
Should have 12V on input - and either 12v or 0v on output depending on switch position.
