What would be the point of upshifting sooner if the engine couldn't hold a taller gear on an uphill? Or if engine could barely hold next gear but running under such high torque load that it would burn more fuel and reduce engine life?

We need to remember that motorhomes, even smaller ones, are not cars or SUVs, and that their power to weight ratio is much lower. For that reason they often have to hold a much lower gear on uphills compared to what we see out of our cars/SUVs.

The Ford V10, like most engines that are not inherently balanced and also have a long piston stroke, doesn't particularly like to rev, but that's where the power comes from. It's a necessary evil if wanting to drive uphills a little faster.
