I have a 22 ft MV with 40 galon fresh water tank that usually lasts a little more than 3 days for us. Is there anyway I can add an additional fresh water tank on top of my roof (or in the back) and fill up my fresh water tank when my fresh water tank is used up? Thanks for your advice.

On the roof? - not strong enough for dynamic loading.
On the back? Maybe: depends on how close you already are to overloading the rear axle.

Do you tow the Frontier? If so throw it in the bed with a small 12 volt transfer pump to fill the onboard tank when necessary.

A gallon of water weighs a little over 8 pounds. You must factor that in when you decide where to put an additional tank. Down low and in the center is best. Perhaps under a dinette seat?

Learning to minimize waste will make your water supply last longer. Paper plates & plastic utensils may not as environmentally friendly but they can eliminate the need to wash them (saving water). Using yesterday's dish washing water to 'pre-clean' the stuff you do need to wash can help save water.

From your handle I assume it is just you and your wife.
40 gallons in three days? You must take long showers daily.
Do you fill you grey and/or black tank in 3 days.

In our van we would get eight days out of less than 30 gallons. Mind you we often bath in the sea and we had a composting toilet.
In our new to us and not yet used Citation we have a 36 gallon FW tank and I am hoping we can get that to last a week at least. I know how much we drink, shower and cook with, but the flush toilet is the unknown. We will see in a week or two when we hit the road for warmer weather.

How about using 5 gallon bottle for drinking and cooking? Save the tank for flushes and showers. A lot of van dwellers survive for weeks on 3 or 4 five gallon bottles.

On longer trips I carry three blue 7 gallon jugs from Wally World. But as stated, you have the additional problem of filling gray and black tanks. Conservation is key.

40 gallons of water in 3 days? If your boon docking that seems like a lot. The wife and I would get about a week out of a 30-gallon tank in our old B+. We didn't use the freshwater tank for drinking, cooking, tooth brushing etc. We carried bottled water for that.
The RV's water tank was for the toilet & military showers (every other day). Baby wipes for daily cleanup saved a lot of water.
These days we don't do the National Forest boon docking any more as old age has made us appreciate full hook ups or at minimum electric campsites;)
