I get that, but the only items tied in are 2 refrigerators and one outlet...maybe I can turn the fridges down/off and plug the microwave into the outlet.
Generally the most they run at is 1000W and can be set lower.

Don't confuse cooking watts with electrical watts.
Your TVs and entertainment devices are also on the inverter.
The start-up surge on a microwave puts an A/C start-up surge to shame.
Cooking with a microwave at 50% power level means it cooks at 100% power level for 50% of the time: 50/50 ON/OFF cycle.
