I thought I would share one of my fall and winter pastimes with everyone.:)
I ground, seasoned, and stuffed about 35 ft. of casings for snacking sticks this morning. Tomorrow they will go into the smoker for about 4 hrs.
Anybody want to hazard a guess as to what the main ingredient is?:D
 
Product is finished, out of the smoker and on the cooling rack. After numerous samples taken I deem it a success.:D
Now,winner for the closes guess was anaro. All tho she did have the ingredients in the reverse order. Venison and then pork. Hunter11 was gracious enough to stand back and not vote as he was pretty sure of the ingredient seeing as there was a lot of sampling going on at the Texas Rally last April.
I'm afraid the booby prize will go to Janet. tofu???:nonono:

Oh no - I just saw this! PLEA-SE don't send any tofu! Some chocolate would be nice though....


I think it's very cool that you make your own. We used to make scrapple, which is sort of related... and it was delicious. Do you ever add dried fruit to your mix?
 
Dh just got a smoker. Now he wants to learn how to ise it. Every meat that comes into the house he says... Maybe we can smoke that.
