My first thought was at highway speeds the pressure might be getting too high which would cause the compressor to shut off unit the pressure is reduced which could be 5-10 seconds later and then the compressor is back on, then back off..... I'm no HVAC mechanic but my understanding of the AC system thinks this is possible.
