Made that trip a number of times. Stayed mostly on interstates but some side trips to consider:

really good boondocking spot south of Dillon, MT. One on the east side of I-15 and one on the west side a little further south.

Bryce Canyon is well worth the stop....at least one full day if not two.

Zion National Park is another. Again, at least one day if not two.

From there we go through Las Vegas, Kingman and on to Phoenix via hiway 93. Wickenburg is always a fun stop for the day as well.
