Not to worry. TX hill country broke a 102 year record for freezing temps. Albeit no snow.
We don't miss the snow either.

For us non Texans - if you google 7th largest city you will get about as many different results as links you click

Yep, we only count the people living with in the city limits. Other cities count all in the metro area. San Antonio has 9 incorporated villages wholly within the city limits where the population of those villages is not added into the official San Antonio census. As for cowboys, we are afflicted with with many "drugstore cowboys" and "goat ropers", but not many real cowboys that work cattle.

Well, going back to the picture in the OP's post, that is just a light dusting of snow. We were in Colorado at the base of the Front Range for two winters (2014 and 2015) and got a lot more snow that that. However, we stay in one place for extended times, so there was very little to deal with for traveling.
However, when we went to move from Colorado in late March of 2016 and head to Oregon, we woke up that morning to 6 inches of snow. Naturally, I got to get up on the roof and sweep off both the roof and all the slides (3 of them) before we could hit the road. Didn't have any road issues as the highways clear off pretty quick with a bit of sunlight.

With regard to cattle and where, I grew up within that industry and worked in it for a number of years. As for that chart on "calved" cow critters, I can guarantee that both Texas and Oklahoma also have a lot of steers and heifers being grown/raised/fed for the meat market. On our farm/ranch alone, we had something like 250 head of cows and their calves, but we had more like 800 head of steers and heifers.
I can't speak for Florida as I've never been there, but are there cattle feeder operations there as there are in Texas and Oklahoma?
EDIT: Went looking. As of November of this year.

Their chart doesn't even have Florida in it.
