Water management issues
We just bought our 2019 Nashville and are noticing that we have fluctuating water pressure at many faucets and showers even though the incoming water pressure is set at 70 pounds via our adjustable pressure regulator. Also, i noticed that when I turn the Kantleak water function knob to fill the freshwater tank, little or no water ever enters the tank.
any ideas or past experiences would be appreciated.

70 psi incoming seems too high to me. We connect ours at 50 max.

70 psi is WAY TOO HIGH!
Where are you even getting that kind of pressure? Normal street pressure is about half that, in the 35-40 psi range. In 10+ years and 400 days in various RV parks, I have never seen that much water pressure anywhere.

If the campground water pressure is squirrelly, simply fill your fresh tank and use your pump. Makes a little noise, but it's consistent.

Depends on the rig. My rig has a max operating pressure of 125 psi and I have been to rv parks having 80 psi of water pressure.
Since the OP has a DRV they should know what their max operating water pressure is.

I have my pressure regulator set to 70PSI, so that’s fine. Check your fill line to the fresh water tank, it might have collapsed. Also depending on which Kantleak system you’re running, you might want to check out the stem.

Sorry street pressure is all over the place! 70 is not too high for a modern plumbing system. Most important is the pressure is steady as domestic can wildly fluctuate. Buy a QUALITY WATTS adjustable regulator and set to 60 at a minimum.

I'll jump on the bandwagon and say any modern RV system can easily handle 70 psi and that at our house the city water pressure is 75 - 85 psi.

The test I was referring to earlier on my 35SF at factory was 100PSI for 10 minutes without a drip. The tech, who was really knowledgeable, said the pex system (if all fittings are correctly installed) is stronger than the PVC we have at home. I guess I'm just a little scared of going beyond 50PSI on anything other than the house.

I agree that the pex and associated fittings will easily handle 100#... the thing I would worry about is the weakest link... how well the crimp rings were installed. If they were crimped properly, you SHOULD have no problems. But were they crimped properly AND thoroughly pressure/leak tested?
Definitely NOT a fun thing to find out when on the road. That's why I carry a small plumbing kit in the RV.
